Tasting Notes
Our only wine made almost entirely with fruit sourced from New Mexico. Syrah, Carignan, Mourvedre and Grenache in a nod to the Rhone wines of France. Rich, spicy, red and dark fruit, earthiness, gaminess and a smooth finish that pairs with a range of foods. Only seven barrels produced.

42% Syrah, 29% Carignan and 22% Mourvedre, New Mexico Vineyards. 4,300 ft. elevation. 7% Grenache. Cimarron Vineyards. Cochise County, AZ. 4,200 ft. elevation.
Production Notes
Destemmed but not crushed to open half-ton fermenters. Syrah and Grenache
were left approximately 20% whole cluster. Cold-soaked 48 hours and fermented
with specially selected yeasts. Hand punched 3-4 times daily, pressed at dryness after
average 12 days’ skin contact. Induced malolactic fermentation and settled
5-6 days before barreling. Twice racked. Unfined and unfiltered.
