Tasting Notes
A wine geek's dream. Spicy/cedary fruit, juicy acidity and dusty tannin of Cabernet Franc layered with the deep red fruit, bigger tannins and savory spice of Petite Verdot. If opening young, give it some time to open up!! Only two barrels produced.

50% Cabernet Franc, Rolling View Vineyard. Cochise County, AZ. 4,200 ft. elevation.
Production Notes
Destemmed but not crushed to open fermenters.
Cold-soaked an average of 36 hours, inoculated with specially selected yeasts.
Hand-punched 3-4 times daily. Pressed at dryness after 11-12 days’ skin contact.
Inoculated for malolactic fermentation and settled 5-6 days before barreling.
Thrice racked. Unfined and unfiltered.
