Tasting Notes
Slightly less mysterious than your average Tempranillo, the Bigness is an instant crowd favorite and a great canvas to showcase the terroir of the Sulphur Springs Valley in Southeastern AZ. A soft, dark wine with warm spice and pleasant richness. Only 2 barrels produced.

100% Tempranillo, Dragoon Mountain Vineyard. Cochise County, AZ. 4,200 ft. elevation.
Production Notes
Destemmed but not crushed to open 3/4-ton bins.
Cold-soaked 48 hours, inoculated with specially selected yeasts.
Hand-punched 3-4 times daily.
Pressed at dryness after 13 days’ skin contact.
Inoculated for malolactic fermentation.
Settled 5 days before barreling. Thrice racked. Unfined and unfiltered.
