Tasting Notes
Arizona Grenache can make extraordinarily silky and spicy wines with femininity and elegance. This Grenache was ~20% whole-cluster fermented giving added spiciness, sweetness, tannin and mid-palate. Syrah (33% whole-cluster fermented) is added for depth and grip, while Tempranillo lends to the velvety texture. Only six barrels produced.

64% Grenache and 16% Syrah Cochise County Arizona from Cimarron Vineyard at 4,200 ft. elevation. 16% Tempranillo Cochise County Arizona from Dragoon Mountain Vineyard at 4,200 Ft. elevation. 2% Carignan and 2% Mourvedre from SW New Mexico at 4,300 Ft. elevation.
Production Notes
Destemmed but not crushed to open 1/2- and 3/4-ton bins. Grenache was
left ~20% whole cluster. Cold-soaked an average of 2.5 days and fermented
with specially selected yeasts. Hand-punched 3-4 times daily, pressed at
dryness after 12-14 days’ skin contact. Induced malolactic fermentation.
Settled 5-8 days before barreling. Twice racked. Unfined and unfiltered.
